Game Tasting - Recipes
We have a Game Tasting Day at the Farm Shop on Sat 26th November.
We will cook some delicious game recipes including venison, pheasant, pigeon and rabbit.
Pan Fried Pigeon Breast
Cranberry Jelly or Redcurrant jelly
Fry onion & garlic, add pigeon breasts and fry until browned. Remove from the heat. Add jelly and wine, stir to make a sauce.
Serve on a bed of green vegetables and pour over sauce.
Potato, carrot and onion diced
Herbs and garlic
Salt & pepper
Port or red wine
Cook all the ingredients in the oven slowly for 2 hours.
Serve with green vegetables.
Game & Pumpkin Soup
Mixed game meat
Potato, pumpkin & onion diced
Garlic & Seasoning
Stock made from game bones
Dice meat and brown over a medium heat
Fry onion & garlic.
Cook diced vegetables in stock until soft, add the venison and season.
Blend all together and season to taste.
Serve with crusty rolls.
1 Pack of puff pastry
1 pack of pate
Onion & garlic
Herbs & seasoning
Fry onion and garlic, brown the venison, then cool.
Roll out the pastry. Spread the onion and garlic on the pastry, place venison on, and then spread with pate.
Seal the pastry into a parcel.
Cook in a moderate oven until pastry is cooked, and serve hot or cold.
